Made myself some beef fajitas for dinner tonight, worked out pretty well.

I don't cook for myself anymore because of my work (no time), but also because I'm the only one I have to worry about feeding., so it's easier to just pick something up. But every now and then, I do cook something for myself if I am able to feed others. My dad was a fabulous cook, and I do remember a couple of recipes he had created.

Tonight was seafood tacos, which came out fairly well. Cooking is something of a hobby for me, the local selections are pretty limited and it's a 45 minute drive to any level of variety, so if I want to eat well, it's either do it myself or live on freezer burritos.
Generally, I make a week's worth on the weekends and have fresh meals then, microwaving during the work week.

I had some leftover popcorn shrimp and French fries for dinner tonight. I reheated them in the oven at 350 degrees for 10 minutes and they came out just right (never reheat French fries in the microwave - they'll only turn out soggy).

I made my own version of chicken parmesan... in that, there's the chicken, there's the parm, and there's the marinara, but instead of pasta as a side I cooked up some ramen noodles, and mixed in some peas.
I still enjoy instant ramen from time to time... but I don't use the little "flavor" pouches that come with the noodle blocks. I reject their "spices" and substitute my own!

I had chicken and cole slaw for dinner, and a Klondike® Bar for dessert.

I'm eating a kind of egg soup called "Changua", It haves rice and eggs cooked together, but the taste is good.

For lunch, I cooked some hot dogs and leftover potatoes (from last night's dinner) in the microwave. For dinner, I had a Swanson's turkey pot pie - the big 16-ounce one - along with some sliced green peppers and baby carrots dipped in ranch dressing.
